Shekey Comara (Summer Wine)

For a 5 gallon batch
  • 3 bottles of 32 oz 100% lemon juice (e.g Rea-Lemon in the green plastic bottles or equivalent)
  • 7 lbs sugar (or 16 cups)
  • 3/4 t tannin
  • 6 tsp. yeast nutrient (3 now / 3 later)
  • 2 tsp. yeast energizer (1 now, / 1 later)
  • Approx, 4 1/2 gallons water
  • 1 packet Yeast  (Carlson #1118 prefered)
  • Potassium metabisulfite
  • Potassium sorbate
  • Sparkolloid
  • Additional 2 lbs (6 cups) of Sugar to sweeten wine after fermentation

 

For a 1 gallon batch
  • 20  oz 100% lemon juice (e.g Rea-Lemon in the green plastic bottles or equivalent)
  • 1.4  lbs sugar (or 16 cups)
  • 1/8 t tannin
  • 1 tsp. yeast nutrient (1/2 t now / 1/2 t later)
  • 1/2 tsp. yeast energizer (1/8 t now, / 1/8 t later)
  • Approx, 3/4 gallons water
  • 1 packet Yeast  (Carlson #1118 prefered)
  • Potassium metabisulfite
  • Potassium sorbate
  • Sparkolloid
  • Additional 1/2 lbs (1 cup) of Sugar to sweeten wine after fermentation
