Low Carb Snickerdoodle Cookies


  • 2 C Superfine Almond flour
  • 1/2 C Salted butter (softened)
  • 3/4 C Erythritol granulated sweetener (like Truvia)
  • 1/2 t Baking Soda
  • pinch of salt

For the cookie coating:

  • 2 T Erythritol granulated sweetener (like Truvia)
  • 1 t Ground Cinnamon



  1. Preheat oven to 350 F
  2. Mix all of first set of ingredients together in a medium size bowl until a dough forms
  3. Roll dough into 16 balls of equal size
  4. Combine “cookie coating” ingredients in small dish and roll each of the 16 dough balls in this sugar-cinnamon mixture
  5. Place on cookie sheet lined with parchment paper then flatten slightly with the bottom of a drinking glass
  6. Bake for between 12-15 minutes then remove from oven and let cool
