Ingredients
- 2 C Superfine Almond flour
- 1/2 C Salted butter (softened)
- 3/4 C Erythritol granulated sweetener (like Truvia)
- 1/2 t Baking Soda
- pinch of salt
For the cookie coating:
- 2 T Erythritol granulated sweetener (like Truvia)
- 1 t Ground Cinnamon
Directions
- Preheat oven to 350 F
- Mix all of first set of ingredients together in a medium size bowl until a dough forms
- Roll dough into 16 balls of equal size
- Combine “cookie coating” ingredients in small dish and roll each of the 16 dough balls in this sugar-cinnamon mixture
- Place on cookie sheet lined with parchment paper then flatten slightly with the bottom of a drinking glass
- Bake for between 12-15 minutes then remove from oven and let cool
