Wassail is a traditional spiced cider drink central to medieval Yuletide celebrations. This recipe draws inspiration from historical practices, creating a warming, fragrant drink for your seasonal festivities.
Ingredients
- 2 liters (8 cups) apple cider
- 2 cups ale or dark beer (optional for authenticity)
- 1 cup orange juice
- 1/2 cup honey or brown sugar
- 3 cinnamon sticks
- 6 whole cloves
- 4 whole allspice berries
- 1 nutmeg (grated)
- 1 inch of fresh ginger (sliced)
- 2 apples (peeled, cored, and sliced into thick rings)
- 1 orange (sliced into rounds)
Optional garnish: Star anise, additional apple slices, or a pinch of ground cinnamon.
Directions
- In a large pot, combine the apple cider, ale (if using), and orange juice.
- Heat gently over medium heat, stirring to combine.
- Stir in the honey or brown sugar until dissolved.
- Add the cinnamon sticks, cloves, allspice, grated nutmeg, and ginger slices.
- Bring the mixture to a simmer (do not boil) and let it cook gently for 30 minutes to allow the flavors to meld.
- While the wassail is simmering, preheat your oven to 375°F (190°C).
- Place the apple rings on a baking sheet and roast for about 15-20 minutes until golden and slightly soft.
- Add the roasted apples and orange slices to the pot. Allow them to infuse for another 10 minutes.
