Ingredients
- 1 small Onion
- 2/3 C (300 g) Ground Beef
- 1 small bunch of dill or parsley
- 1/2 t Salt
- 1/4 t Pepper
- 1 t Basil
- 2 Eggs
- 1 medium tomato
- 2 flour tortillas
- 1/4 C (50 grams) Provolone Cheese
- 1/4 C (50 grams) Mozzarella Cheese
- 9″ Frying pan
Directions
- Grate onion as fine as you can and put into bowl
- Add ground beef to bowl
- Mince dill or parsley very fine and then add to bowl
- Add salt, pepper and basil and mix thoroughly
- Break the 2 eggs in a separate bowl and whisk until combined
- Grease a 9″ frying pan with butter or olive oil
- Place one of the tortilla in the frying pan
- Place the ground met mixture in he center of the tortilla and spread it out so that it covers the entire tortilla
- Grate the Provolone Cheese over the ground meat mixture
- Place second tortilla shell on top of the grated cheese and meat
- Pour eggs over the tortilla
- Fry on medium heat for 10 minutes, turning at 8 minutes
- Slice tomato in thin slices and layer tightly on top of tortilla as it is finishing frying.
- Grate mozzarella cheese on top of tomatoes, cover , and leave on heat an addition al 4 minutes.
- Slice and serve.
