Garlic Parmesan Sausage
- 1 T Kosher Salt
- 3 cloves fresh Garlic
- 2 T White Pepper
- 1 C Grated Parmesan cheese
Hot Sausage
- 1.5 oz. Salt
- 1 oz. crushed Red Pepper
- .5 oz. Fennel Seed
- 1 oz. Paprika
3 Cheese Parsley Sausage
- 1 T Kosher sSalt
- 1 T ground White Pepper
- 1 C dried Parsley (or 1 small bunch fresh parsley chopped)
- 1/3 C Provolone cheese
- 1/3 C Parmesan cheese
- 1/3 C Pecorino Romano cheese
Sweet Sausage
- 1/2 oz. White pepper
- 3/4 oz. Fennel
- 1.5 oz. Salt
