Sausage Recipes

Each of the recipes below are for 5 lbs. of meat

Garlic Parmesan Sausage

  • 1 T Kosher Salt
  • 3 cloves fresh Garlic
  • 2 T White Pepper
  • 1 C Grated Parmesan cheese

 

Hot Sausage

  • 1.5 oz. Salt
  • 1 oz. crushed Red Pepper
  • .5 oz. Fennel Seed
  • 1 oz. Paprika

 

3 Cheese Parsley Sausage

  • 1 T Kosher sSalt
  • 1 T ground White Pepper
  • 1 C dried Parsley (or 1 small bunch fresh parsley chopped)
  • 1/3 C Provolone cheese
  • 1/3 C Parmesan cheese
  • 1/3 C Pecorino Romano cheese

 

Sweet Sausage

  • 1/2 oz. White pepper
  • 3/4 oz. Fennel
  • 1.5 oz. Salt
