The Summer Class is more focused on both medicinal and edible plants, although some plants may need to be stir fired or cooked for tenderness. One of the plants that we will cover is Purslane (pictured on the left), mentioned by Henry David Thoreau in Walden. Its also an excellent source of Vitamin A, (1320 IU/100 g, provides 44% of RDA) one of the highest among green leafy vegetables. Vitamin A is a known powerful natural antioxidant and an essential vitamin for vision.
Your really do not need to bring anything to class except rain wear and footwear for rain (just in case) as well as a notebook and paper if you wish to take notes, which we recommend. A camera might also come in handy if you want to take some photos of the plants on our field walk such as the plant to the right that can stop bleeding and keep mosquitoes away!
