Elderberry Blossom Wine

  • 1 gallon Boiling water
  • 1 qt Elder blossoms
  • 3 lb Sugar
  • 1 Lemon; thinly sliced
  • 1 pack wine or champagne yeast
  • Wine making Airlock
  1. Put blossoms in a large kettle and pour water over them.
  2. Let stand 1 hour.
  3. Strain, add sugar to liquid, boil a little and skim.
  4. When lukewarm (75 degrees F), add lemon and yeast.
  5. Cap with Airlock filled with 100 proof Vodka
  6. Let sit for 3 weeks in a warm (70-80 degrees F) place
  7. Rack the wine into a clean 1 gallon jug and let sit another 3 weeks to allow it to clear
  8. f wine is clear you can bottle it, ifnot rack one more time
