Beer Mustard

Ingredients:
1 C Brown Mustard Seed
1/4  C Yellow Mustard Seed
1 C Dark Homebrewed Beer
1.5 C White Wine Vinegar
1 C Mustard Powder – combine with 1 C water, let sit 20 min
1 t Salt
1 t Sugar
1 t Allspice
1/4  t Turmeric
1/4  t Mace

Optional –
habanero and/or other peppers
fresh horse radish

  1. Combine mustard seeds with beer and vinegar in a non-reactive container (stainless, ceramic, plastic).
  2. Seal, let sit 48 hours, stirring occasionally, and adding more liquid if necessary. The mixture often needs to be topped up as the seeds soak up a lot of liquid as they soften. Top with either vinegar or beer.
  3. Transfer seeds and liquid to a food processor.
  4. Add remaining ingredients and process until smooth, (about 5 minutes). If you like grainy mustard reserve some of the seeds for addition later in the processing.
