Potatoe-Bacon Soup – Camping Style

An easy to make, fall favorite.

Ingredients

  • one 2 lb. bag of frozen diced Hash Brown Potatoes
  • 1 bag (2 cups) of grated Cheddar Chees
  • 1 pound of fried, drained well, and crumbled Bacon ( or 1 Bag precooked Crumbled Bacon)
  • 1 block of Cream Cheese (8 oz.)
  • 1 packet of dry Ranch Dressing Seasoning
  • two 10.5 oz. cans (or 1 large 22.5 oz. can) of Cream of Chicken soup
  • 32 oz. box of Chicken Broth
  • Parsley garnish (optional)

Directions

Over a Campfire

  1. Combine all ingredients in large pot
  2. Add Garlic Salt and coarse ground Pepper to taste
  3. Cook over low heat for 1 hour stirring occasionally.

At Home

  1. Combine all ingredients in crock pot (4 quart size)
  2. Add Garlic Salt and coarse ground Pepper to taste
  3. Cook on LOW for 7 hours or on HIGH for 4 hours
